The following recipe is from Patrick Holfords 9-Day Liver Detox. Many detox diets are big on salad and yes raw vegetables are very good for you, but do you really want to eat salad every day in the depths of Winter? Including some hot comforting soup in your detox eating plan may make the difference between sticking to your resolve or not.
Serves 2-3
1 tsp coconut oil or medium(not extra virgin )olive oil
½ red onion, roughly chopped
1 garlic clove
1 large carrot,peeled and chopped
1 large sweet potato, chopped to the same size as the carrot to ensure even cooking
1 heaped tsp grated fresh root ginger
¼ tsp turmeric
2 tsp Marigold reduced salt vegetable bouillon powder
½ red pepper, diced
75g (2 ½ fl oz) coconut milk
